For the Tofu Scramble
- 1 block extra-firm tofu (pressed and crumbled)
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- ¼ tsp turmeric (optional, for color)
- Salt and pepper to taste
For the Wraps
- 4 whole wheat tortillas (or gluten-free if needed)
- 1 cup shredded romaine lettuce
- ½ cup diced tomatoes
- ½ cup sliced bell peppers
- ¼ cup thinly sliced red onion
For the Avocado Lime Sauce
- 1 ripe avocado
- Juice of 1 lime
- 1 clove garlic
- 2 tbsp vegan yogurt or mayo (optional, for creaminess)
- Salt to taste
Prepare the Tofu Scramble
Press the tofu to remove excess moisture. Crumble into bite-sized pieces.
Heat a non-stick skillet over medium heat and add olive oil.
Add crumbled tofu and cook for 2-3 minutes. Sprinkle with chili powder, cumin, smoked paprika, turmeric, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally, until lightly golden.

Assemble the Wraps
