Ingredients
  

For the Tofu Scramble

  • 1 block extra-firm tofu (pressed and crumbled)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp turmeric (optional, for color)
  • Salt and pepper to taste

For the Wraps

  • 4 whole wheat tortillas (or gluten-free if needed)
  • 1 cup shredded romaine lettuce
  • ½ cup diced tomatoes
  • ½ cup sliced bell peppers
  • ¼ cup thinly sliced red onion

For the Avocado Lime Sauce

  • 1 ripe avocado
  • Juice of 1 lime
  • 1 clove garlic
  • 2 tbsp vegan yogurt or mayo (optional, for creaminess)
  • Salt to taste

Instructions
 

Prepare the Tofu Scramble

  • Press the tofu to remove excess moisture. Crumble into bite-sized pieces.
  • Heat a non-stick skillet over medium heat and add olive oil.
  • Add crumbled tofu and cook for 2-3 minutes. Sprinkle with chili powder, cumin, smoked paprika, turmeric, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally, until lightly golden.

Make the Avocado Lime Sauce

  • Blend avocado, lime juice, garlic, and vegan yogurt until smooth. Adjust seasoning as needed.

Assemble the Wraps

  • Lay a tortilla flat. Spread a dollop of avocado lime sauce on the tortilla.
  • Add romaine lettuce, tofu scramble, tomatoes, bell peppers, and red onion.
  • Roll tightly, folding in the sides, and slice in half for easy serving.
