Ingredients
  

  • 10 Large tortillas Large tortillas Whole grain or flour
  • 8 Eggs Whisked
  • 1 cups Turkey sausage Cooked and crumbled
  • 1 cups Black beans Drained and rinsed
  • 1 cups Shredded cheese Cheddar or Monterey Jack
  • 1 cups Bell peppers Diced
  • ½ cups Onions Diced
  • 1 cups Spinach Chopped
  • 1 tbsp Olive oil For sautéing veggies
  • Salt To taste
  • Pepper To taste

Instructions
 

Cook the Fillings:

  • Heat a large skillet over medium heat and add olive oil. Sauté the bell peppers, onions, and spinach until tender. Remove from the skillet.
  • In the same skillet, scramble the whisked eggs. Season with salt and pepper to taste.

Prepare Protein:

  • Cook and crumble the turkey sausage (or warm black beans for a vegetarian option).

Assemble the Burritos:

  • Lay each tortilla flat and place a layer of eggs, sausage/beans, sautéed veggies, and shredded cheese in the center (about ¾ cup of filling per tortilla).

Wrap the Burritos:

  • Fold in the sides of the tortilla, then roll tightly from the bottom up to form a burrito.

Wrap for Freezing:

  • Wrap each burrito in aluminum foil and place in a freezer bag. Label with the date.

Freeze:

  • Place the burritos in the freezer. They can be stored for up to 3 months.
  • Reheating Instructions:
  • Microwave: Remove foil, wrap in a damp paper towel, and heat on high for 2-3 minutes.
  • Oven: Reheat in foil at 350°F for 20 minutes.

  • For extra flavor, add hot sauce or salsa to the filling before wrapping.
